I am having a party and I just love sausage balls… I make them with bisquik, cheese & the sausage. Any suggestions?

I make good sausage gravy for my biscuits that was passed on from my great grandma in Alabama. One of the secrets is to use evaporated milk instead of just regular. I am always looking for variations though, what have you got? The South always has the best minds in food as far as I’m concerned.
Here is my complete recipe
1 package jimmy dean beakfast sausage ( I use hot because it itsn’t hot but adds spice)
3 tablespoons of flour , all purpose
3 tablespoons butter
1 can evaporated milk, one can of regular
salt and pepper
Cook whole package of sausage in skillet -break up and drain well
Melt butter over med. heat in clean pan, add flour (do not brown)
stir until mixed well
add 2-3 cups of milk gradually until thick enough for gravy . Add sausage and salt and pepper . Simmer until hot but do not boil . May have to keep salting here and there to enhance taste , otherwise it will taste bland. Once you have it to perfection, pour over split biscuits .
I’ve gotten tips not to drain the sausage so i wont do that anymore …maybe my Mom changed that one to make it lower fat . Well wee can’t have that .
Thanks everybody, I cannot believe the good tips I have gotten and I will try them all . My body may not like it but anyone that incorporates bacon fat into their gravy

How do you work it out. For instance 5 snacks per person or 2 of each ingredient. Small sausages, cold meat, rosy tomatoes, chicken wings, pineapple,miniature meatballs etc. Any other ideas?

starting from ground meat. Make sure to include amounts of ingredients. I want to make about 10 lbs of sausage at a time. Ground or cased, either one will do.
Yall don’t seem to get it. I want to know spice recipes for making sausage, not cooking it. I want to know what spices to pour onto ground meat, to put into intestines and then cook.

I left a few leftover pieces of sausage pizza sitting out on the counter – oops. It was out for about 14 hours. Can I nuke it and eat it? I know I’m not supposed to, but really, what are the odds it will make me sick? It’s the only food around and I don’t feel like going out in the rain :\
