Can solid bacon drippings be used when making home made sausage? The recipe calls for "fat" but does not really say what?
Also, how about solid chicken fat?

Yes you can use bacon fat, infact that would be quite delicious but the sausages will have that smokey bacon flavour. Sausages must have an adequate pecentage of solid fat to keep them moist during cooking. If you are worried about the fat content just prick the sausages and allow the fat to drain out during cooking. Pork fat is the ideal choice but as bacon is pork you shouldn’t have too many problems, just make sure they are well cooked to allow the fat to melt.

The recipe is actually asking for the fat that you’ve trimmed from the meat before grinding it to make the sausage.
